The name "osso bucco" means bone with a hole, which funnily enough is quite accurate however the name references the way in which the meat is cut by the butcher. Osso Bucco was originally a traditional Italian dish which utilised cross cut beef shanks, wine, vegetables & broth. Today Osso Bucco is used in a variety of slow cooking dishes as it provides the perfect balance of meat, bone & marrow which leads to a rich, tasty, flavoursome meal where the meat literally falls apart. To get the best out of this cut cook it long & cook it slow.
